Our Upcycling Initiative
Upcycling is the process of making food products out of underutilized or undervalued ingredients. By doing this, we can prevent waste and have a positive impact on the food supply chain and environment.
Block Party has embraced this practice. We use Brisket Trim, which is removed during corned beef manufacturing to round out the Brisket and separate the Flat and the Point. We take this Trim, which is tough if it’s not processed properly, and slow cook it for many hours to break down the proteins and create our tender and delicious bites. All this smoky flavorful goodness while reducing waste… Now that’s a win-win folks!
